Pumpkin Shaped Cookies

Angie gave me her awesome pumpkin cookie cutter last week, and I've been itching to make pumpkin cookies. Even though it doesn't quite feel like fall here in Nairobi, it's fun to pretend! :) The kids and I had fun making them and then I iced them when they went to bed. Needless to say, we have lots of pumpkin shaped cookies around here.

No Fail Sugar Cookies

6 c. flour
3 tsp. baking powder
2 c. butter
2 c. sugar
2 eggs
2 tsp. vanilla
1 tsp. salt

Cream butter and sugar. Add eggs and vanilla. Mix dry ingredients and add to butter mixture. Mix well. Chill for 1 to 2 hours. Roll to desired thickness and cut into desired shapes. Bake on an ungreased cookie sheet at 350 for 8-10 minutes or just until beginning to turn brown around the edges. My pumpkins took about 18 minutes.

White Frosting

4 c. powdered sugar
1/3 c. margarine
dash of salt
2 to 4 T. milk

Mix all ingredients with mixer.
